Jean Delport is the award-winning chef behind the Michelin-starred Restaurant Interlude at Leonardslee Gardens, West Sussex. Born in Cape Town, Jean honed his culinary craft in South Africa’s renowned Cape winelands, working at esteemed establishments like Terroir and Rust en Vrede. Early in his career, he mastered fine dining under chefs such as Michael Broughton and John Shuttleworth, gaining a deep appreciation for classical techniques and bold flavors.

After a stint in Ireland, Jean returned to South Africa, taking a pivotal role at Equus, where he met Adam and Penny Streeter OBE. Penny’s acquisition of the Grade I listed Leonardslee Lakes & Gardens in 2017 led to the creation of Restaurant Interlude, which opened in 2018. A year later, Interlude earned its first Michelin star, followed by a Green Star in 2023 for sustainability.

Jean’s multi-course tasting menus celebrate Sussex’s seasons and South African influences, featuring foraged ingredients and estate-sourced produce like venison, rabbit, and birch sap. Dishes, such as the traditional South African Koeksisters, highlight his commitment to heritage and sustainability. Jean’s passion for reducing waste and using ingredients responsibly ensures that Interlude offers an exceptional, eco-conscious dining experience deeply rooted in its surroundings.
