Roasted Pepper and Black Bean Chilli

Ingredients
1 onion, diced
1 carrot, grated
1 courgette, grated
1 red pepper, large diced
1 garlic clove, crushed
400g passata / chopped tomatoes
200g black beans
200g borlotti beans
75g dried red lentils
1 tbsp oil
1.5 tsp ground cumin
1 tsp smoked paprika
Pinch of salt
25g dark chocolate
1 heaped teaspoon chipotle paste – optional for those adults who would like a kick
Splash of apple cider vinegar
Method
Step 1
Place cut up peppers on to roasting tray with salt and oil.
Step 2
Roast in the oven for 20 minutes at 180 degrees.
Step 3
Heat oil in a pan, big enough for all ingredients. Add onion and salt - cook until translucent and starting to colour.
Step 4
Add garlic, fry until fragrant. Watch like a hawk so it doesn't burn!
Step 5
Add cumin, paprika, carrot, courgette and cook until soft, stirring all the time.
Step 6
Add tomatoes, lentils and 1 pint of water.
Step 7
Add beans (and chipotle paste if you want it spicy). Keep heat to a low simmer, stirring now and again to make sure it doesn’t burn.
Step 8
Cook gently for around 40 mins, adding water if it gets dry. Taste to make sure your lentils are cooked.
Step 9
Add roasted peppers.
Step 10
Add chocolate (let it melt in) and salt to taste.
