Mini Frittatas – Zai
Information
Makes 10-12 frittatas
Ingredients
15g olive oil (plus a little extra for greasing)
1 bell pepper, chopped
4 spring onions, sliced
6 large eggs
120ml milk
¼ teaspoon salt
⅛ teaspoon black pepper
100g cheese, grated (we used cheddar)
Method
Step 1
Prepare the Oven and Tin: Preheat your oven to 175°C (fan 155°C). Grease a cupcake or muffin tin with a thin layer of olive oil.
Step 2
Cook the Veggies: Ask a grown-up for help! In a frying pan, heat 15g of olive oil over medium heat. Add the chopped bell pepper and spring onions, cooking for 5–7 minutes until they’re nice and soft.
Step 3
Make the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until it’s all smooth. Stir in the cooked veggies and grated cheese.
Step 4
Fill the Muffin Cups: Carefully pour the egg mixture into the muffin cups, filling each one about three-quarters full.
Step 5
Bake: Place the muffin tin in the oven and bake for 20 minutes, or until the frittatas are set and lightly golden on top.
Step 6
Serve: Let them cool for a little while before removing them from the tin. Enjoy your tasty mini frittatas!
