Tom Shepherd, Upstairs, One Michelin Star *

Tom & his team create flavour led, produce driven menus inspired by the seasons and surroundings. Born in Sutton Coldfield, Birmingham and trained at New Hall Hotel in Walmley, he was most recently Head Chef of 1 Michelin Star Adams in Birmingham and won an Acorn Award in 2018. He also worked at Restaurant Sat Bains as Development Chef – a 2 Michelin Star Restaurant in Nottingham, as well as Sous Chef to Michael Wignall at The Latymer – a 2 Michelin Star Restaurant in Bagshot, Surrey.

Upstairs by Tom Shepherd is Staffordshire’s first, and only One Michelin starred restaurant, located in the heart of the beautiful, traditional city of Lichfield.

Matt Gillan, Heritage

A protégé of Daniel Clifford, Gordon Ramsay and John Campbell, Matt Gillan is well versed in the hallmarks of high-end cuisine, yet he retains a dazzling streak of originality.

Matt joined South Lodge Hotel in West Sussex in 2006 and his talent has earned The Pass 4 AA Rosettes, and in 2011 a coveted Michelin star. He also got through to the final banquet of Great British Menu in 2015 with his Goat dish which scored a perfect 10/10 in the judging rounds.

Matt went on to open Heritage in September 2019 after a successful Kickstarter campaign.
